Warm German Potato Salad

Warmer Kartoffel Salat

6 medium potatoes 

6 slices bacon

1/2 medium sized onion, chopped

2 tablespoons flour

2 tablespoons sugar

1/2 teaspoon salt

1 teaspoon celery seed


1 cup water

1/2 cup vinegar

In a covered saucepan cook potatoes in boiling salted water for 25-30 minutes or until tender; drain well. Peel and slice potatoes. 

In a large skillet cook bacon till crips; drain crumble, reserving 1/4 cup drippings. 

Cook onion in the resesrved drippings till tender but not brown.

Stir in the flour, sugar, salt, celery seed and pepper. Add water and vinegar. Cook and still till thickened and bubbly. Cook and still 1-2 minutes more.

Stir in bacon and potatoes. Carefully toss. Cook another 5 minutes or until heated through. 


Serves: 6-8 servings



Use a large skillet; it makes it easier to mix everything. I always add more vinegar in the end to top it off but thats my own personal taste. I could pretty much drink vinegar!
