Schupfnudeln (a.k.a. Finger Nudeln)

Finger Noodles

2 lbs. potatoes

1 cup flour

2 eggs

Salt & Pepper

Butter for frying

 

Boil the potatoes whole. Peel and grate into bowl. Sift the flour ontop of the potatoes; add the eggs, salt and pepper; mix well.  

Use ample flour on your hands and roll the dough to finger-length pieces. Fry them in a pan with butter until all sides are nice and brown.  

Tip:

Finger noodles go really well with homemade applesauce!
