4 Medium sized potatoes

1/2 cup sour cream

1/2 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon pepper

1 teaspoon chives

1 small onion, finely chopped (optional)

Facts:

The spread was originally a dish that was prepared for the seasonal workers that helped with the potato harvest. The name itself can be confusing because it does not contain any cheese. To make it more confusing the Bavarian name for this dish is 'Erdaepfelkas', which translates to Earth Apple Cheese.

Boil the potatoes and peel. When the potatoes are cold, finely grate. Use a grater or simply mash the potatoes with a fork. You can boil the potatoes the day before.

Add the sour cream, heavy cream and the onions to the potatoes. Salt and pepper to taste. The chives can be mixed in as well or sprinkled on top.

Depending on the size of the potatoes you can add more if the spread is too soft.
