1 tablespoon butter
1 medium onion, chopped
5 oz. Emmenthaler cheese, grated
1 teaspoon dry mustard
Pinch of salt
2 cups cooked spaetzle noodles
2 tablespoons chives, chopped
Heat butter in a frying pan, add onions and brown lightly. In a separate dish, toss the cheese with the dry mustard.
Add the cooked noodles and the cheese mixture to the onions. Mix well.
Place mixture in an ovenproof casserole dish. Bake at 300 degrees Fahrenheit for 20-30 minutes or until hot and bubbly.
Sprinkle top with chopped chives before serving.
